Recipe: Mushroom Curry (2 persons):


Ingredients:

  • 200g mushrooms (button, cremini, or any of your choice), sliced

  • 1 small onion, finely chopped

  • 1 small tomato, chopped

  • 2 cloves garlic, minced

  • ½ inch ginger, minced

  • 1 green chili (optional), chopped

  • ½ tsp cumin seeds

  • ½ tsp turmeric powder

  • ½ tsp red chili powder (adjust to taste)

  • 1 tsp coriander powder

  • ½ tsp garam masala

  • ¼ cup coconut milk (or yogurt for a different taste)

  • ½ cup water

  • 1 tbsp oil or ghee

  • Salt to taste

  • Fresh coriander leaves for garnish


Instructions:

  1. Heat oil in a pan on medium heat. Add cumin seeds and let them sizzle.

  2. Add chopped onions and sauté until golden brown.

  3. Stir in garlic, ginger, and green chili. Cook for 30 seconds until fragrant.

  4. Add chopped tomatoes and cook until soft. Mash them slightly.

  5. Add turmeric, red chili powder, coriander powder, and salt. Stir well.

  6. Toss in the sliced mushrooms and mix everything together. Cook for about 5 minutes until the mushrooms soften and release water.

  7. Pour in coconut milk (or yogurt) and mix. Add water to adjust consistency. Simmer for another 5 minutes.

  8. Sprinkle garam masala, stir, and turn off the heat.

  9. Garnish with fresh coriander leaves and serve hot with rice or naan.
